It’s Spring: time for salads! You will love this variety with asparagus, fresh apple, soft goats cheese and delicious balsamic cream combined with the bite that spelt grains add… Perfect for a lovely lunch or dinner after a day outside! And it’s done in no time too.


Usually I spend half of my weekends at my parents place and the other half in our apartment with the boyfriend. This weekend however I was a bit tired of having to be somewhere else all the time, so I decided to stay in Breda. All by myself! I’m not that good at being alone, so this was a bit of a challenge.

To be honest: it went so much better than I expected. I actually had a lot of fun! I was in a really good mood and the sun was shining… And then I was baking a cake and walking around on the local Saturday market looking for great vegetables, and meeting my friend for a coffee at this cute little place. I haven’t been alone (at least not with positive experiences) for so long, so I’m really happy everything worked out!

Asparagus/apple/spelt/goats cheese salad

Mmmkay, so this recipe is actually really easy. I originally had something completely different in mind: I wanted apple cider vinegar and feta cheese. Then I realised that I could cook whatever I wanted since I was alone anyway: Yay! The boyfriend doesn’t like goats cheese while I love it, so this was the perfect excuse to use it in a recipe again.

If you don’t have or don’t like spelt grains don’t worry: couscous or quinoa would be lovely as well.

  1. Mixed lettuce, 150g
  2. Green asparagus (tips), 150g
  3. Spelt, 80g
  4. Soft goats cheese, 80g
  5. Apple, 1 piece
  6. Balsamic cream
  1. Cook the spelt for 10 minutes.
  2. Cut half a centimetre off the end of the asparagus, and cook them for 2 minutes in a bit of water.
  3. Cut the apple into small pieces and mix with the lettuce.
  4. Mix the asparagus and spelt through the lettuce as well.
  5. Top with some balsamic cream and goats cheese.
  6. Serve!
