Trying out new recipes is something I love to do. I knew of quesadillas but had yet to try them, and I had one of those inspired moments so I decided to give it a go! I added some of my favourite ingredients: spinach, minced meat and bell pepper. And cheese of course! It’s super simple yet quite delicious.
I’m not usually a fan of wraps. I think they’re hard to eat, usually a tad dry and they’re always cold before you’ve finished assembling all your toppings. No, no, no! But I’ve found quesadillas to be completely different: the melted cheese keeps the wraps nice and moist, and because they’re pan fried they remain very hot for quite some time. Approved!
So yes, wraps are hard to eat. Normally you wouldn’t really care, right? Unless it’s your first date. Do you feel a story coming up?
If you did, you were absolutely right. It’s actually MY first date story! You see, before the boyfriend and I were together there was this scary yet exciting time we dated.
We met at Centerparcs, where I worked as a waitress and he was the mysterious cold-dishes cook in the kitchen of the Grill. I call him mysterious because he was the only person who did not introduce himself when I returned to work there after a few months, and because he didn’t have a name tag!
But we ended up talking about music (we are into the same stuff) and that’s when it all began. How romantic, right? 😉 So, after a while we had that CRAZY scary first date (I mean, I was scared. He was cool as a cucumber). We had ice cream in the city and then ate dinner with his room-mate and his girlfriend. She made wraps, for which she has apologized many, many times!
First dates are scary, I think we’d all agree. They make us nervous enough without the added pressure of meeting his friends on that same date, all while trying (and failing) to eat wraps with green beans and chicken as elegantly as possible. Luckily they are really nice, and I was able to relax and laugh about this experience pretty soon after. Oh and added bonus: when we did the dishes I got a yellow sauce stain on my white blouse!
All joking aside everything turned out right and, three years later, we are still as happy as we’ve ever been. We live together in this cute apartment, with the cutest little kitty, and I can’t imagine ever wanting a different life.
Okay, now it’s time for the actual recipe! It’s super easy and highly customizable, so feel free to add anything you might like. See you soon!
- Wraps, 4 large
- Spinach, 300g
- Minced meat, 500g
- Bell pepper, 1 red
- Grated cheese, 100g
- Salt, pepper, chilli flakes
- Heat up a frying pan without oil. Season the minced meat and add this to the pan.
- Cook until it starts to brown, then add the spinach. Cook this until the spinach shrunk in size.
- Cut the bell pepper into cubes and add this to the mixture. Season with chilli flakes and extra salt/pepper, if preferred. (remember that the cheese adds saltiness as well!)
- Place a wrap on the bottom of a frying pan, and fill one side with the mixture. Top with grated cheese, and fold the other half on top.
- Fry on both sides until the wrap is golden brown and the cheese has melted.
- Cut in half, and enjoy!
- Tastes great with some sweet chilli sauce as well.
