These breakfast quesadillas with bacon, eggs, cheese and spinach are perfect to start your day! They’re filling and contain some essential vitamins.

You know, for most people the weekend are the best days of the week. I used to feel the same, until I started working as a waitress… We were always working when everyone else is free! Of course, I enjoyed it quite a bit. The team I worked with was like family, and I still miss the teamwork and fun we had.
Over the past year, I’ve shared quite a few breakfast recipes. I simply love my oatmeals, waffles and pancakes… Food that will get me out of bed! However, this is the first time in a looong time that I’m actually sharing a savoury recipe. Why is that? I guess I’m so used to eating something sweet in the morning!
I notice I’m a bit low on energy and inspiration, so I’m just going to start talking about this recipe now 😉 It wasn’t until very late in my ‘culinary adventure’ that I discovered quesadillas. Now that I have, however, I’d like to experiment a bit more! Us Dutchies aren’t used to having vegetables for breakfast, but I think this is a working combination. I could definitely get used to it!
When I made these quesadillas, I was mainly inspired by…. leftovers. Leftover bacon, leftover spinach: it’s a great way to get creative! If I were to add anything to this dish, it would definitely be mushrooms. We tried it once, and it’s delicious! Bell pepper could work too, or tomatoes… Beans, why the heck not.

- 1 wrap
- 2 eggs
- 20 g bacon diced
- 40 g spinach
- 2 tbsp grated cheese
Start by frying the bacon. Once this is cooked, add the eggs and scramble until fluffy.
Meanwhile, sauté the spinach for around 2 minutes.
Heat up a (grill)pan, and place the wrap inside. On one half of the wrap, add 1 tablespoon of grated cheese, and top with the scrambled eggs, bacon and spinach.
Add another tablespoon of grated cheese on top, and fold the other half of the wrap over the mixture.
Let this cook for around 2-3 minutes on each side, or until toasted and the cheese has melted. Enjoy!
Nice additions: avocado, potato, tomato, beans and maybe some sweet chilli sauce.
