When the weather gets better, I want to cook less and enjoy more! How about you? While sunny weather and rising temperatures usually make me think of salads and stuff, this time it made me crave something sweet. When I was at the market they had this deal on lemons, so I knew I had to find a way to use them… And that’s how I came up with this beautiful cake idea!

Caramelized white chocolate. I had never heard of it before, until I saw it used on a recipe in Masterchef Australia. A little while ago I won 60 bars of chocolate, so the idea popped back into my head when I was thinking about ways to increase my lemon cake from just normal to superb. However, I didn’t win any white chocolate bars… So I had to go and buy some! Oops, haha. Maybe I should think of recipes that use milk and dark chocolate instead 😉

So, how does it work? Caramelized white chocolate isn’t that well known, but I can tell you it’s beautiful. The flavour is slightly caramel-y, if that makes sense? It should, because it’s the sugars in the chocolate that caramelize of course. Anyway, because you add the chocolate last it gets ‘roasted’ when you add the cake to the oven… So it turns slightly golden brown, and it gets a lovely flavour I can only explain as caramelized white chocolate!

Caramelized white chocolate and lemon sheet cake

Ingredients

  • 2 eggs
  • 230 g sugar
  • 115 g butter room temp
  • 220 g flour
  • 100 g white chocolate
  • 120 ml buttermilk
  • 40 ml lemon juice
  • 2 tbsp lemon zest
  • 1 tsp baking soda
  • 1 tsp salt

Instructions

  1. Preheat the oven to 160 degrees Celsius. Whip together the eggs, butter and sugar until it's a smooth mixture. In a separate bowl, mix the baking soda with the flour. Chop the white chocolate into chunks.

  2. Add the buttermilk, lemon juice and lemon zest to the mixture and give a quick mix.

  3. Slowly start adding the flour, while making sure it's incorporated in the mixture.  Once this is done, add the salt.

  4. Pour into a brownie tin and sprinkle over the white chocolate. Then place in the oven for 35-40 minutes.

  5. Once it's done and slightly cooled, carefully take it out of the tin. Some of the white chocolate tends to stick to the baking paper or tin. Store in an airtight container, and enjoy! Consume within 4 days for best flavour.
