Adding vegetables to your breakfast is a food trend, and with this delicious recipe for carrot cake oats it couldn’t be easier! Done in no time.
Most of the time, I’ll have something with oatmeal for breakfast. It’s either a big bowl of oats, an oat flour pancake or yoghurt with homemade granola. There are endless variates possible, which is what I love so much about it!
When you start thinking outside the box, there’s even more possible than you might think. Instagram usually is a good source of inspiration, but I have to admit I was a bit disgusted when I saw the first bowls of ‘zoats’ pass by! These are big bowls of oatmeal with grated zucchini in them. Yes. Sounds weird, if you aren’t used to it!
However, curious as I was, I decided to give it a try. And it’s actually pretty nice! You don’t really taste the zucchini, and it adds a nice texture. Like it would when you add apple or something. So I started thinking of other vegetables to add to my oats…
So far, I’ve only come up with carrots. Hence the carrot cake oats. So if you have any suggestions for vegetables to add to my oatmeal, please send me a message!

Carrot cake oats
Mmmkay, so these carrot cake oats are actually a really logical choice for me, as carrot cake is my all time favourite pie. Imagine waking up with your favourite pie every day!

- Carrot, 1 small (+/- 45g)
- Instant oats, 45g
- Soy milk*, 150 ml
- Honey, 1 spoonful
- Cinnamon, 1 teaspoon
- Nutmeg, 1/4 teaspoon
- Ginger (optional), 1/4 teaspoon
- Walnuts, 1 spoonful
- Grate the carrot as finely as you prefer. I use a food processor for this.
- Mix the carrot with the oats and soy milk. Pop in the microwave for around 2 minutes.
- Add the cinnamon, nutmeg, ginger and honey and stir through.
- Top with the walnuts, and enjoy!
- *: you can use any type of milk you prefer, but I suggest soy milk.
