Broccoli couscous with za’atar pork tenderloin

A delicious dinner dish: broccoli couscous with pork tenderloin marinated in za'atar herbs. Healthy and very tasty too! | Stay Alive and Cooking

This dish is something completely different! Raw broccoli is combined with couscous, lime zest and pecans to create a delicious dinner dish. Pork tenderloin is seasoned in za’atar and baked in the oven, and matches the couscous really well!

Usually, the kitchen is my domain. It needs to be tidy, clean and organized the way I prefer, and I decide what we eat during the week, too. Not because I’m some sort of control freak, don’t worry 😉 But because the boyfriend is usually gone all day for his internship. But sometimes, just sometimes I let him decide what we eat. He chooses a recipe and I cook it or adapt it and then cook it. That’s when we get recipes like this!

Pasta with broccoli and mushrooms in a creamy sauce | quick & easy

Pasta has got to be my favourite dish. I mean, pasta can be so many things, right?! It could be a lasagne, it could be macaroni with lovely red sauce and vegetables or it could be this version, for example. This dish contains many vegetables but also that delicious saltiness of fried minced meat. Trust me: you will love this!

This dish originated when the boyfriend and I made pasta with leftovers. We had some broccoli and mushrooms lying around and decided to mix this together with some cream cheese and pesto: yumm! Today I share with you an updated version, without the pesto but with some other touches instead. Only €1,40 per portion!

Vegetable/herb cheese omelette & omelette struggles | budget-proof challenge

In my weakly meal planning I always leave the last day for dealing with vegetable leftovers. You can make them into delicious pasta dishes, this simple dinner oven dish or a great stir-fry dish… But today I’ll share with you a great way to turn them into an omelette with a twist.

I always have some eggs in my pantry as they are so versatile. Over the years I’ve levelled up my egg-game by turning them into great scrambled eggs, shakshuka in delicious tomato sauce, omelettes, oven baked eggs or cakes. (Wait, what? That’s not the same thing!) As I’m getting busy with school again I’ll be sure to share more of these dishes: simple and quick dinners are the best!

Noodles with broccoli and pork tenderloin

Hi again!

I’m so enthusiastic about this recipe I’m sharing today, I absolutely loved it… I don’t cook noodles often, but when deciding what I wanted to prepare I got this idea in my head and it turned out just as I wanted it to! Crispy broccoli, flavourful tenderloin and nice and salty mushrooms with noodles in a great sweet chilli sauce might just be my new favourite dish… Of the month at least 😉

A little while ago I walked to the Asian Toko here in Breda. I decided to go there more often: not only is their sweet chilli sauce delicious (instead of this sticky, waaay to sweet and not spicy at all version they sell in Dutch supermarkets), they also had many great ingredients such as frozen soy beans for a great price, soto for my next noodle soup, the matcha powder I had been looking for and so much more. Happy me!
