I love pasta. I mean, who doesn’t?! I think spaghetti and meatballs is the favourite dish of many kids around the world. Today I decided to reinvent this classic: roasting tomatoes in the oven makes them extremely tasty, and because the meatballs are baked in the same tray it’s done in no time! (And with little dishes… ;))

If you follow my blog, you’ll know that I have been using my oven way more lately. I love those kind of meals! You cut your vegetables in big chunks, add the meat, season the bunch, toss it in the oven and then you have around 45 minutes to do whatever you want (dishes? Movies? Homework?) until your food is ready. Chicken and veggies roasted to perfection? Yes, please!

And all of that for only 2,30 per portion! Sadly, I will need to move away from my Monday = affordable dishes from now on. I have to spend less time blogging because of school unfortunately, and having a theme on specific days is a bit too difficult. Will continue to upload affordable dishes during the week, of course!

I’ve found a new love for roasted vegetables and this is definitely a great recipe! And so easy, too: just clean the green beans, cut the onion and garlic, toss this in an oven dish with the balsamic vinegar and some olive oil and then into the oven for 25 minutes: done!

Green beans are a vegetable I don’t nearly eat enough. That is definitely going to change now, as I got so much inspiration from cooking this dish… Did you see my green bean and tomato quiche yet?

Roasted chicken thighs

For all of you students out there: this is such an easy yet delicious way to eat chicken. Really! Our whole apartment was filled with this amazing smell and the chicken itself was sooo tender and the flavours of the butter and herbs were soaked up by the meat and it was just… Perfect.

I don’t want to say I’ve reached my peak moment yet but this for sure is the best recipe on my blog so far!
