I love tomato soup. And I also love cooking with ingredients I wouldn’t normally use, like fennel. The fennel adds a fresh touch to the soup, which goes great with the sweet tomatoes. It’s not overpowering at all, and I ended up really liking it!
I’M BACK! There was a bit of radio-silence from my end but now I’m here again with a delicious, crunchy, zingy, vegan (!) and gluten free shredded Thai salad with chilli lime dressing. So good! Every once I cook a dish with only vegetables and beans. This can be a challenge, as it’s not always as filling as my regular meals: we’re so used to eating either meat or potatoes/rice/pasta! However, this dish meets the requirements of a regular meal. We were soooo full!
