It’s time for another soup recipe! Today I’ll share a great and simple cauliflower soup. You don’t need many ingredients at all, yet it’s very delicious! And done in no time.

As you all know, I love a great soup. This is one of my newest discoveries, and one of the best if you ask me! It’s simple, healthy and very nourishing. I didn’t add any cream or cheese yet it’s sooo creamy… Are you curious yet?

Ingredients
  1. Cauliflower, 1 piece
  2. Onion, 1 piece
  3. Garlic, 2 cloves
  4. Stock, 1 litre (vegetable or beef)
  5. Chives, 2 spoonfuls (chopped)
Instructions
  1. Start by roughly chopping up the onion and garlic.
  2. Toss into a pan and start to cook them.
  3. Meanwhile, wash and cut the cauliflower into pieces. You can use the stem!
  4. Add this to the onions in the pan and heat up your stock.
  5. Add the stock to the pan and let simmer for fifteen minutes.
  6. Purรฉe the mix with a hand blender and add the chives.

  2. I love cauliflower, but I’ve never turned it into a soup. This looks really delicious. Is it thick or thin? I don’t buy it too often, because lately the price has risen. 5 dollars for a head. Although I do have plans to go to the market today to get one because I will be making cauliflower mash to go with marsala.

    1. It’s quite thin, but I always add a lot of water. You can add less or course! I know, I actually go to the market for the same reason!
