I’m not a big fan of plain boiled chicory, but this chicory salad is a total winner. Seriously, so many different flavours all contribute to one gorgeous dish! And the homemade dressing might be your new favourite, too.
This recipe combines sweet grapes, fresh apple, bitter chicory, walnuts and salty smoked chicken. Top all that with a delicious homemade honey mustard dressing, and you’ve got a gorgeous chicory salad!
My dad and I are very much alike. For example, we are both really good at storytelling, and we both often forget about the question we were answering halfway through the story. Some might say we “talk too much” but hey, I guess that’s an opinion right? 😉
Anyway, my father always helps me with my home improvement and sometimes even flat tires. Every time he will say “next time, you and your boyfriend can do it yourself because it’s not that hard to hang a lamp/place paintings/*insert handyman job here*” but then, without me even asking, another time he will say “So. When do you want to go and look for those roller blinds?”

So yesterday he was here and we found grey roller blinds for in the living room. (Privacy! YES!) He was working on hanging them up and I was cooking. I asked him “Dad? When is chicory in season?” because I’m trying to pay more attention to that, in a way to be more sustainable and aware of my ecological footprint. “They are in season every month in the Netherlands…” he started.
And then quite a long story followed, telling me how they are grown, how they have to be in dark areas at all times because otherwise they won’t be white anymore but green instead. (I bet you didn’t know that, did you!) I now know that the stalks are grown by one farmer, and then another farmer buys them and grows them into the vegetable we buy in supermarkets. I know a lot of things now, instead of just the answer to my simple question: “when are chicory in season”.
See dad? You thought I never really paid attention when you spoke.
On to the actual recipe! Before I forget what I was here for 😉
- Chicory, 3 pieces
- Apple, 1 small
- Grapes, 1 handful
- Smoked chicken, 1 breast
- Walnuts, 1 handful
- Yellow mustard, 4 spoonfuls
- Honey, 2 spoonfuls,
- Apple cider vinegar, 2 spoonfuls,
- Thyme, 2 teaspoons
- Cut the end of the chicory and peel the leaves. Wash and dry.
- Chop the leaves into smaller pieces. Toss this in a bowl.
- Cut the apple into pieces as well, and add.
- You can cut the grapes in half if they are large, and add as well.
- Dice the smoked chicken and walnuts and toss this in the mixture.
- Combine all ingredients and stir well.
- No salt or pepper is needed: just taste to see if it needs more mustard or honey.
- Mix the dressing with the salad, and you're done!
Mmmm, I know I want to eat this chicory salad more often! The boyfriend approves. How about you?
