Mmmm, it’s time for a refreshing new recipe! Traditionally, we’d only eat chicory either boiled or raw, in a salad. My little brother and I always refused to eat this: the flavour is so strong and harsh! My mom decided to combine the chicory with cheese and ham in a little dinner casserole, which we thought was a bit better. However, I wish she’d had this recipe when we were kids! Because you caramelize the chicory first, it turns into a beautiful sweet flavour.

Chicory tarte tatin with feta and walnuts

So, a chicory tarte tatin. I know this word is not that well known in the English speaking community, but basically it’s an ‘upside down pie’! The word itself is French, as you may have guessed, and it simply means that you flip over the pie after baking and before eating it. It’s usually made with apples, but for today’s (dinner) version it’s made with chicory!

I found this recipe in a magazine of Dutch supermarket Jumbo. After tweaking it to my personal liking, here’s the end result! This chicory tarte tatin can be eaten as lunch or light dinner for two. If you prefer, you can add something like a salad on the side.

Ingredients

  • 400 g chicory
  • 1 onion large
  • 240 g puff pastry 5 sheets
  • 1 tbsp butter
  • 2 tbsp sugar
  • 2 tbsp honey
  • pepper
  • 2 tbsp walnuts
  • 60 g feta

Instructions

  1. Preheat the oven to 200 degrees Celsius. Heat up a frying pan, and melt the butter. Cut the onion in slices, and the chicory in quarters.

  2. Add the onion to the pan, and cook for one minute until glazed. add the chicory, and cook 2 more minutes. Finally, add the sugar and honey, season with fresh pepper and let simmer for another 5 minutes.

  3. Roll out your puff pastry until it's wide enough to cover your quiche mould. set aside. Once the mixture is done cooking, pour it into the mould. Make sure everything is spread evenly.

  4. Cover the mixture with the puff pastry and tuck in the sides. Place in the oven for 20-25 minutes, or until the top is golden brown.

  5. Take out the oven, let cool for a few minutes and turn upside down on a plate. Top with walnuts and feta, and enjoy!
