No, these brownies definitely aren’t the prettiest on the block… But damn, are they delicious!

Confessions

Have you noticed how many of my blogs start with a confession? Well, I have another one for you… Before I made this batch, I had never made brownies before. Like, never. I had eaten them, yes, but never really felt tempted to try and bake them myself. You’re probably going ‘WHAT?! WHY!!!!’ And yes, that’s exactly what I’m thinking now that I’ve tried these deliciously gooey, moist but with a crunch on the top brownies 😉

So I’m sure you understand that I now have to make up for lost time. Post ALL the brownie recipes! Any tips? Tricks? Good recipes? Gimme gimme!

That reminds me, I do have a question for you brownie experts out there… When I made the second batch, the top wasn’t crunchy and dry like this one but more… flat? Even? Not crunchy? How does that happen? I used exactly the same recipe!

Espresso brownies

If you haven’t already, try adding some espresso to your baking. It’s super delicious! It doesn’t taste super coffee-ish, but it adds more depth to your recipe. You have that subtle flavour lingering in the back of your mouth to contrast the chocolate: so good!

Final note: if you can’t find chocolate chips (I had quite a hard time!) simply chop up some chocolate. This recipe uses milk chocolate drops, but feel free to swap this out for a darker version!

Ingredients

  • 225 g sugar
  • 100 g flour sifted
  • 2 eggs large
  • 120 ml oil vegetable, sunflower
  • 60 ml water
  • 60 g chocolate chips
  • 40 g chocolate, milk or dark
  • 35 g cocoa
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 3 tsp espresso powder
  • salt

Instructions

  1. Preheat the oven to 180 degrees Celsius.

  2. Melt together the sugar, water and chocolate in a pan or bowl in the microwave. Add the espresso powder, mix well and set aside.

  3. In a large bowl mix together the (sifted) flour and baking powder. Beat the eggs until slightly fluffy. Add the cocoa, eggs, oil vanilla, a pinch of salt and 40g chocolate chips and mix together.

  4. Stir through the melted chocolate sugar mixture. Pour into a greased baking tin, and sprinkle the remaining 20g of chocolate chips over the top.

  5. Place in the oven for around 30 minutes. Check with a skewer: it should come out dry, but with moist crumbs. Store in an airtight container, and enjoy!
