Club sandwich deluxe: your new favourite lunch! With two layers of delicious ingredients, you can’t go wrong. Serve with chips for added effect!
Lunch game is strong
Lunch can be boring, or standard. But sometimes you just want to have something special, right? Sometimes you just need some extra motivation to go on with your day. To finish that work week, or to work extra hard on that project. That’s where the special lunch comes in. This is a lunch you allow yourself every once in a while: as reward, as motivation. This recipe is one of those special ones. It’s so good you’d want to eat it every day….
This may be very typical, but I reward myself with food quite often. Hard day in therapy? Make sure I bring some chocolate for the way home! Worked hard on my blog, or school (in the past)? Time for a delicious dinner meal! This actually helps me a lot, and I know I can’t be the only one 😉
Even if you’re not really into cooking as much as I am, I promise this one’s very easy and simple. All you do is toast some bread (optional), slather it with hummus, add some chicken fillet and avocado, add another layer of toast, slather this in the best homemade (1 minute!) basil mayo, add ham and top that with some lettuce, a fried egg and another piece of toast. Cut in half diagonally, and enjoy! We sure did. And we were so ready to go on with our work after that! (A bit full though, maybe go easy on the chips… ;))

I feel like I’m rambling, but coincidentally.. It’s almost lunch time. However, my bf and cat are currently napping on the couch (study break!) so I can’t get up and make myself something… problems!
Let’s just get to the recipe now, shall we? For this I use basil mayo, which is homemade and absolutely fabulous! You can find the recipe here, it literally takes one minute and it’s so much better than your regular mayonnaise. If you don’t want to make your own, delicious mayonnaise you can of course use store bought 😉 Maybe add some fresh basil, because it matches really well with this club sandwich deluxe!
It’s definitely recommended to serve this with some chips and extra basil mayo, but that’s totally up to you. Enjoy, and don’t forget to let me know what you think!
Club sandwich deluxe
- 6 slices casino white bread
- 6 slices chicken fillet
- 6 slices cooked ham
- 2 tbsp hummus
- 3 tbsp basil mayo*
- 1 avocado
- 1 handful chopped lettuce
- 2 eggs
- extra basil mayo
- potato chips
- salt, pepper
Toast the slices of bread on both sides if preferred. Cut the avocado in pieces. Set aside.
Fry both eggs individually. Sprinkle with some salt and pepper.
Place two slices of bread on individual plates. Spread 1 tbsp of hummus on both slices, and drape the chicken fillet on top. Top with the avocado pieces.
Add the second slice of bread. On both slices, add 1 tbsp of the basil mayo. Place the ham in a nice manner, and top with the lettuce and fried egg. Add a little bit of extra basil mayo, and top with the final slice of bread.
Cut the sandwiches diagonally in half, and enjoy with some chips!
