Today I show you how to make a coffee syrup. It’s really nice and sweet, and the vanilla adds a nice touch! It’s perfect to use in desserts, oatmeal bowls or cocktails, on top of pancakes, over ice cream or in a baking project. And it’s really easy to prepare, too!

I lately started being more active on Pinterest, too. I always bookmarked my recipes but I now realize how much nicer it is to be able to actually see the recipes! I’ll know exactly what I crave when I look at the pictures. Or I’ll want to eat everything. Anyway, I made different boards on Pinterest, from “breakfast” to “vegetables” and everything in between. But, next to scrolling through those websites and reading food magazines from supermarkets and stuff, I have another source of inspiration. Believe it or not, but I watch a lot of… Masterchef!
The dishes they prepare are way too advanced of course, and usually something you’d prepare for special occasions instead of on a weekday. However, I get so inspired from the passion they have for cooking. I love how they come up with new ideas, create the weirdest flavour combinations that actually work, and how hard they work to live their dream.
You might be wondering what all of that has to do with coffee syrup, well, I don’t know. Haha! Nahh, I always watch them “reduce liquids” to become a gravy or a sauce. And I always add some hazelnut flavoured syrup to my coffee if I have a rough day (this equals “if I’m feeling sorry for myself I get to have some extra sugar”) and then I thought I should try to make a syrup out of coffee. My mind does the weirdest things 😉
Besides my mind doing the weirdest things this was actually a really really good idea. I replaced the honey in my usual bowl of oatmeal with this syrup in the morning and it was so delicious! It’s like combining your breakfast and coffee in one. But then in a good way, you know? I sort of fell in love and I hope you do too!
- Strong coffee, 350 ml
- Sugar, 150g
- Vanilla extract, 1 teaspoon
- Add all the ingredients to a pan. Cook on medium heat.
- Stir until the sugar is fully incorporated in the coffee mixture.
- Bring mixture to a boil. Boil for around 5 minutes, while stirring in between. Make sure it doesn't overflow!
- When the mixture has thickened a bit, take it off the heat and let cool down.
- Poor into a glass jug or jar, and store in the fridge.
