All day breakfast fans unite! I could eat these waffles for breakfast, brunch, lunch, dinner, snack or dessert. Or all of the before mentioned. Who’s with me?

Memories

Coffee brings back so many memories for me. Sydney, for example. I worked for half a year in this fancy hotel with a ridiculously large variety of breakfast foods available. Every morning when we would come in for work, the barista would make our favourite cup of coffee. For me this was a flat white: nowadays they also serve them in the Netherlands, but they never seem to get them right. Too strong!

And then, another memory that pops up is from my short trip to Melbourne. I went there with a friend/housemate, and we booked those tourist-tours that required us to be picked up extremely early. Because we didn’t want to waste time, we ordered a simple breakfast in the café that was below the hotel. We stayed in the same hotel chain as the one I worked at in Sydney, which meant we got loads of discounts 😉

Anyway, I remember us both ordering Danish pastries and a cappuccino. Never ever has a cappuccino tasted the same again! I honestly still believe this was the best cup of coffee I have ever had. This may sound silly, but to me it just proves that certain tastes can be a memory, too. Does that make sense? I remember the view at the great ocean road, I remember the koala we saw climbing a tree, and I will never forget that perfect cup of cappuccino. I truly am a foodie, aren’t I?

What a story! It may not sound interesting at all, but I honestly rate holidays on the food I’ve had. Anyone else?

Coffee waffles

I love coffee. I mean, who doesn’t?! I like mine with a lot of milk, as I’m not really into bitter tastes. I’ve been experimenting with coffee a lot lately: coffee syrup, coffee oatmeal, coffee granola… And now coffee waffles! I love the subtle hint of coffee in there, and it pairs so well with the melted chocolate.

I would wake up early just to have these, how about you?

Even though I’m not usually a morning person. More like usually not. Of course, when I’m super productive and have already ticked off half of the things on my to do list before lunch, I’m really happy. But waking up early isn’t one of my strongest points… Haha!

Ingredients
  1. Flour, 250g
  2. Sugar, 35g
  3. Baking soda, 1 teaspoon
  4. Milk, 340 ml
  5. Oil, 70 ml
  6. Egg, 1 large
  7. Instant coffee, 1 spoonful
  8. Hot water, 1 spoonful
  9. Salt
  10. Butter
For the topping:
  1. Chocolate spread (nutella), 150g
Instructions
  1. Heat up your waffle iron.
  2. Mix the flour, sugar and baking soda. Add a pinch of salt.
  3. Pour in the oil, and start mixing. Add the milk bit by bit. Mix the water with the instant coffee and add to the mixture.
  4. Finally, add the egg and mix until everything is incorporated.
  5. Put some butter in the waffle iron and spread some of the mixture.
  6. Let this cook until browned, which with my waffle iron took around 6-8 minutes.
Topping:
  1. Warm up the chocolate spread until it's melted. Drizzle over the waffles, and enjoy!
