Ohh, salads. Pasta salads, salads with chicken, salads with cheese, with or without fruit, colourful salads… I love ’em! They’re a very important part of the dinner buffets at our birthdays or parties, and why wouldn’t they be?
A while ago I told you that I have a lot of ‘food memories’, right? Well, when we talk about salads I have quite a few of those! When we were younger we’d go to our grandparents for dinner, and we’d eat my grandpa’s famous tomato soup and my grandma’s salads. My favourite part of those salads: the fruit! Grandma would often add an apple in pieces or some tangerine wedges. While I’ve been adding apple to my salads for quite a while now, I sort of forgot about tangerine. It’s not that popular on Pinterest, either.
A few weeks ago we watched photos and relived memories of my sweet grandma who sadly passed away. I remember the times we’d craft and make clothes for our dolls with her, the times we spent in the playground, the sleepovers we had with my cousins…. And yes, I also remember the food! Always when we’d stay over at our grandparents we would eat a ‘rusk’ with butter and brown sugar after breakfast. Still one of my guilty pleasures 😉
And of course the salads she made. I don’t really remember that much of those dinners, just that the salads had tangerine and/or apple in them. Funny how the (foodie) mind works, eh? How to get a kid to eat veggies: make it a colourful salad!
Okay, enough story time 😉 Let’s get onto this recipe, shall we?! And please do tell me what your favourite salad ingredients are!

- Olive oil, 50 ml
- White wine vinegar, 30 ml
- Honey, 40 ml
- Thyme, 1 teaspoon
- Salt, 1 teaspoon
- Mixed lettuce, 100g
- Apple, 1 red
- Tangerine, 2
- Red onion, 1 small
- Walnuts, a handful
- Feta cubes, 150g
- Mix the ingredients for the dressing together and set aside.
- Cut the apple in cubes and peel the tangerines. If you like you can cut the wedges in half, but serving them whole is to my preference.
- Cut the red onion in thin slices. Roughly chop the walnuts.
- Mix all this together, or assemble nicely in a large salad bowl.
- Serve with the dressing. Enjoy!
