Easy & quick dinners are great for weekdays. I think I don’t nearly share enough of these recipes, so I plan to upload more! Today I start with this delicious freekeh dish, that takes 15 minutes to prepare.

I need a bigger kitchen

Uhh, I may have said this before: my kitchen is wayyyyy too small. How am I supposed to store all my ingredients and cooking supplies in a kitchen that’s around 2 square metres?! A while ago I decided to start using closet space in the living room area as well, and that’s helping. A bit. Because every time I walk past a cooking store I want to buy buy buy!

Sometimes I allow myself to dream. Of this big kitchen, I mean. One day we’ll move out of our lovely apartment and into a new one, with the kitchen as centrepiece. If it’s up to me. I’m sure the boyfriend will agree 😉

Actually I think it’s for the best that I don’t have this huge kitchen yet. The limited space keeps me from buying a kitchenaid (I already have a magimix!) and numerous plates, sets of cutlery and baking/cooking appliances such as a bundt cake mould. However, I do plan to visit vintage/thrift stores with Louise soon… We need more props!

I almost forgot why I started writing about this bigger kitchen. You see, the boyfriend sometimes gets this…. Cleaning rage. Is that a thing? I think it is. Like this weekend, he was just going to get himself a snack and he ended up re-organizing the entire pantry. (We don’t even have a pantry, but I mean the 2 huge drawers filled from top to bottom with numerous ingredients!)

And then I realized that I have way more to cook with than I thought. So, I decided to swap the rice I planned to use for the freekeh the boyfriend found on his adventure in our piles of food :p And it turned out to be quite a good idea! The nuttiness of the freekeh really adds to this dish.

I hope you enjoy it as much as we did, and if you can’t find freekeh in your pantry: brown rice, couscous, buckwheat or any other grain would work as well 😉

Ingredients
  1. Freekeh, 100g
  2. Broad beans, 300g (cooked)
  3. Chipolata sausages, 4
  4. Cashew nuts, a small handful (optional: roasted)
  5. Za'atar seasoning, 1 1/2 teaspoon
  6. Salt, pepper
  7. Olive oil
Instructions
  1. Cook the freekeh for 10 minutes.
  2. Meanwhile, fry the sausages until golden brown. This will take around 5 minutes.
  3. Heat up the broad beans as well. Chop up the (roasted) cashews.
  4. Season the cooked freekeh with za'atar seasoning, salt and pepper.
  5. Add the beans and sausage and top with cashews. Enjoy!
