Gnocchi with creamy mushroom and bacon sauce: what’s not to love?! This dish is filling, nourishing, comforting and downright delicious.
Gnocchi is one of my favourite ingredients to cook with: so comforting! This recipe with mushrooms, bacon and a creamy sauce is perfect for me. Pair with some rocket lettuce and you have a delicious meal!
Ahh, gnocchi. Numerous times before I’ve told you that food usually brings back so many memories for me, and gnocchi is no different! I’ll tell you a little story about the first time I had gnocchi. If you don’t care, simply scroll down for the recipe!
Many years ago we went on a little camping trip in Limburg, which is a part of the Netherlands. With ‘we’ I mean my uncle, cousin Dagmar (from My weird blogs!) younger cousin, their neighbours, the neighbours’ daughter (and friend of ours) and her boyfriend, and the neighbours’ son and his girlfriend, who were sleeping at a different part of the camp ground. Anyway: this is one of the best holidays I’ve ever had!
You see, my cousin Dagmar and I get along really well. We can be goofy together but also have serious talks, and together with her neighbour and her boyfriend we had so much fun. That time we tried to find new friends (but failed), that time I saw a little bump in the floor of our tent and decided to touch it (turned out to be a tiny mouse hiding under our tent, who quickly ran away!), that time we went on a canoe trip and Dagmar and I kept zigzagging from one side of the river to the other instead of in a straight line…. Oh yes, it was so much fun.
Anyway, this trip was also the first time I tried gnocchi. The neighbour was going to cook it for us since everyone kept asking her to, and I grew very curious. My cousin and our friend described gnocchi like this: ‘I don’t know, it just feels funny when you eat it!’ Yeah thanks guys, that made me real eager to try 😉
Anyway, I tried it and instantly fell in love. So pillowy, so creamy: YUMM! Their neighbour prepared gnocchi with peas and bacon if I remember correctly, and I’ve been wanting to recreate that ever since then.Gnocchi in a creamy mushroom bacon sauce: yes please! Find the recipe here.Click To Tweet
Gnocchi with mushrooms and bacon
Okay okay, I’ll stop blabbing! Now it’s time for the recipe 😉 Hope you enjoy it guys, I know we did!
Can I say one more thing? It’s such a pain to photograph gnocchi and make it look edible! Ohmygosh!
- Gnocchi, 300g
- Mushrooms, 250g
- Bacon strips, 100g
- Cooking cream, 125 ml
- Onion, 1 small
- Rocket lettuce, 75g
- Italian herbs
- Salt and pepper
- Chop the onion. Heat up a frying pan, and start frying the bacon. Add the onion.
- Meanwhile, cook the gnocchi according to instructions. This should take around 5 minutes.
- Slice the mushrooms and add to the frying pan. Cook until the mushrooms are browned.
- Add the cooking cream, and season with salt, pepper and Italian herbs.
- Mix with the gnocchi and serve with the rocket lettuce*.
- *: If you prefer the taste of the rocket to be less spicy, you can add the lettuce to the creamy mixture and let it cook for around 30 minutes.
