Salads only for sunny days? Heck no! With this recipe you can eat salads in winter, too. Delicious roasted pear, creamy goats cheese, salty bacon and crunchy walnuts give this salad it’s flavour, and the honey-thyme dressing ties that all together. Yumm!

Leaving the nest

With our kitty and my natural resistance for travelling and having to adjust to a new surrounding, I’ve been spending more and more weekends in our apartment in Breda. Pretty normal, you’d think, but for students in the Netherlands this isn’t necessarily the case! We’re used to spending the weekend at our parents, even years after we left the house to live on our own.

I mean, this would continue until we’re 24 or something. Not 40-ish. Usually.

But still. I think it’s a good tradition, as it really strengthens the family bond. Plus, I love spending weekends at my parents place. I get to see my brother and our pets, my grandma and sometimes other family members. No cooking, no household chores: welcome to hotel mama!

However, the before mentioned kitty and natural resistance for travelling and ‘living at two places’ or more, have resulted in me slowly…. leaving the nest. Don’t get me wrong, I still love going home! But I’ve started being really comfortable on my own as well. Living together with the boyfriend and Noes (kitty!) is really cosy.

Of course I still see my parents quite regularly: my dad works close to where we live, and they are super happy when I stay for a couple of nights with the cat and/or boyfriend. My mom likes to visit me in Breda, too: we went for a long walk in the forest once, and this day we spent relaxing, talking and reading.

I love showing my mom that I can cook (See! I can take care of myself!) and we were both super happy with how this goats cheese salad turned out. I think you will be, too!

Okayyyy, I think it’s recipe time now. I don’t know about you guys, but goats cheese salads get me so excited! I’ve ordered quite a few in restaurants, and I’ve gotta say that my version was also prettttty tasty. If you’d like to make this goats cheese salad vegetarian, simply replace the bacon with more walnuts and pear.

You don’t have to roast the pear, but I highly recommend it: it really brings out the flavours! Will I see you again soon?

For the dressing:
  1. Olive oil, 2 spoonfuls
  2. Honey, 2.5 spoonfuls
  3. White wine vinegar, 1 spoonful
  4. Thyme, 1 teaspoon
  5. Salt, 1 teaspoon
For the salad:
  1. Lettuce mix, 100g
  2. Pear, 1 large
  3. Bacon pieces, 125g
  4. Walnuts, 25g
  5. Soft goats cheese, 100g
Preparations:
  1. Preheat the oven to 180 degrees Celsius.
  2. Clean the pear and cut into thin slices. Place on a tray lined with baking parchment. Place into preheated oven for 10 minutes.
  3. Meanwhile, fry the bacon pieces until crisp. Place them on a kitchen towel to drain the grease.
  4. Roughly chop the walnuts, and prepare the dressing with ingredients mentioned above.
Directions:
  1. Put the lettuce mix in a large bowl. Place the slices of pear on top.
  2. Add the bacon pieces, goats cheese crumbles and walnuts.
  3. Serve with the dressing. Enjoy!
