I’ve found a new love for roasted vegetables and this is definitely a great recipe! And so easy, too: just clean the green beans, cut the onion and garlic, toss this in an oven dish with the balsamic vinegar and some olive oil and then into the oven for 25 minutes: done!
Green beans are a vegetable I don’t nearly eat enough. That is definitely going to change now, as I got so much inspiration from cooking this dish… Did you see my green bean and tomato quiche yet?
The sun is shining… Or was shining at least
Can’t believe this! I actually managed to get this comfy chair on the balcony (I had to climb over the couch) I sit down and BAM! These huge clouds in front of the sun. You have to be kidding me *sad face*.
We’re supposed to get this reaaally nice Spring weather here in the Netherlands, I’m extremely excited! I’ve been feeling so much better with the days lasting longer and the sun occasionally shining right at our apartment. Instant happiness! Don’t you agree?
Anyway, I’ll share my recipe with you now 😉 I came up with this while reading on my balcony (no sun, but I’m stubborn!) and thinking about the leftovers in my fridge. I have this new cook book called “Love your Lunch” and they have a recipe for balsamic onions. I decided to try something new and add the green beans I had in my fridge as well!
Green beans and onion with balsamic glaze
This is such an amazing side dish. I had this for dinner with some chicken and I loved every bite. I didn’t even include potatoes or something, so it was quite healthy. I’m trying to eat more veggies and that will definitely succeed if everything tastes as good as this 😉
- Green beans, 250g
- Red onion, 1 piece
- Garlic, 2 cloves
- Balsamic vinegar
- Olive oil
- Salt and pepper
- Preheat the oven to 200 degrees Celsius.
- Wash and clean the green beans and toss them in an oven tray.
- Cut the onion and garlic into 6 pieces and add them to the beans.
- Sprinkle some olive oil and balsamic vinegar over the top together with some salt and pepper, and mix well.
- This can go in the oven for about 25 minutes: easy peasy!
