You know what I find so convenient about couscous meals like this green vegetable couscous salad? The next day, they make great to-go meals! Now that I’m in therapy 2 days a week, I spend a lot of time in public transport and, of course, outside my house. I’ve never been a huge fan of simple sandwiches, so meals like this one are perfect for me!

What I love about this salad, is that it’s so easy. All you do is cook the couscous and bean pods, and chop up everything else: done! So convenient! It’s great for multiplying as well, so it makes for a great addition to a large lunch or dinner spread on birthdays or picnics.

Green vegetable couscous salad


Prep Time 10 minutes
Servings 2

Ingredients

  • 120 g couscous
  • 200 g bean pods
  • 1/2 zucchini
  • 1 bunch radish
  • 2 tbsp fresh parsley
  • 1 avocado
  • 1/2 cucumber

for the dressing

  • 20 ml lemon juice
  • 20 ml apple vinegar
  • 40 ml olive oil
  • 1 tbs honey
  • salt, pepper

Instructions

  1. Prepare the couscous according to instructions, with some salt. Clean the bean pods and cook them for 5-7 minutes.

  2. Wash and cut the cucumber in half moons or slices. Wash the radishes, and cut in half. Peel the avocado, and cut into cubes.

  3. Mix the ingredients for the dressing together, and set aside. Chop the fresh parsley. Once the couscous is cooked, add the vegetables and parsley. Top with the dressing, and serve!

Recipe Notes

Pro tip: add some feta!
