Ahhh, the good old grilled vegetable. Are you tired of me yet? You shouldn’t be! Because this post is different from the others, I promise 😉

First of all, this recipe calls for a grill pan instead of oven. See? Totally different! Personally I found myself to be really fond of the combination of the green asparagus and tomatoes: it pairs really well, especially with the balsamic vinegar finish. Furthermore, I think this dish will go with almost anything. Fish? Yep! Chicken? Sure! A barbecue? Nice! Pasta? Rice? A salad? Toast? Yes, yes and yes! If I were to make this for a dinner spread, I think I’d make some extra to serve the next day in for example a pasta salad.

Ah, I have another random fact for you. Here in the Netherlands, the green asparagus were seen as the “cheaper” asparagus. You see, us Dutchies are particularly fond of the white asparagus, which grow underground… I guess the green one gets its colour from growing above the ground? Anyway, I was super surprised to see the green asparagus featured in all sorts of fancy dishes (eggs Benedict, mmmm..) in Sydney. One man’s trash is another man’s treasure, I guess!

Not that I think there’s anything wrong with the green asparagus, on the contrary. I like that they have a bit of a bite, you know? The way I’m used to eating the white ones (with boiled eggs, a creamy cheese sauce and ham!) is way softer, and sometimes overcooked.

Time for the recipe! I think you could make this dish in the oven as well, but this is first of all way faster and way safer, too. You see, the last thing you want is to have overcooked asparagus… Which is why I like to prepare them in a way that allows me to keep an eye on them at all times!

Done in no time and a total crowd pleaser: I see no reason why anyone wouldn’t love this dish. Hope you do too!

Grilled asparagus and tomatoes

Ingredients

  • 5 tomatoes
  • 10 asparagus
  • 1 tbsp balsamic vinegar
  • 1 half lemon
  • olive oil
  • salt, pepper

Instructions

  1. Wash the tomatoes and cut in half. Rinse the asparagus, and cut of the tough part at the bottom. Sprinkle with olive oil and balsamic vinegar, and season with some salt and pepper.

  2. Heat up a grill pan. Wash the lemon and cut in slices. Once the grill is hot enough, flash grill the lemon slices. Set aside.

  3. Place the tomatoes on the grill, with the cut side down.Grill for 2 minutes, then turn over. Add the asparagus and grill for another 3-4 minutes, while turning the asparagus every minute or so.

  4. Drizzle over the juice left over from the marinating, and take off the heat. Serve with the lemon slices, and enjoy!
