Flatbread

Flatbread is just one of those ingredients that you should always have lying around. I use them store bought or make them myself : you just can’t go wrong! They go great with curries, omelettes, salads, soups, meat dishes or stews… I’m getting plenty of recipe ideas now, haha! Expect more soon 😉

Anyway, I want to start by saying that you can basically use any type of (flat) bread for this recipe. When I first ate this recipe, we had them with pita breads, which was also pretty good. Story time!

Students cooking

Okay, so the story of how I came to make this recipe. You see, I currently live with boyfriend and cat in a cute apartment in Breda, but before this (and before my time in Sydney) I lived in a huge student building with over 200 other students. Luckily, I shared my bathroom with only one guy and I had my own kitchen, and my room was facing away from all the ‘noisy’ areas (garden, bike storage etc.) so I really felt at home there.

Anyway, because I had the luxury of having my own kitchen, that usually meant that when I would eat with friends we’d cook over at my place. Not that I minded! As a student with health in mind (HA! That’s a joke) I decided to join the gym with one of my close friends Noor. We would go to the gym once a week and afterwards cook dinner together.

We were probably still first or second year students, and had very little cooking experience. This meant that we’d usually cook simple fried potatoes – a vegetable – a piece of meat, but sometimes one of us saw or heard of a recipe somewhere that we decided to try.

So this one day, Noor had this recipe for hamburgers in pita breads with tzatziki, lettuce and cucumber. At first I thought she was nuts but I had to admit it was a pretty damn good combo: and I’ve been thinking about it every time I saw tzatziki since! However, this is the first time (3 years later) that I’ve decided to do something with this memory. And hey: it was still as good as I remembered!

Of course, this recipe is slightly different. I like making homemade meatballs and can’t cook a recipe without giving my own twist to it 😉 Also, I made homemade tzatziki instead of store bought. Recipe down below!

Ingredients
  1. Greek yoghurt, 385g
  2. Cucumber, 1 half
  3. Garlic, 2 cloves
  4. Olive oil, 2 spoonfuls
  5. White wine vinegar, 1 spoonful
  6. Salt, 1 teaspoon
  7. Lemon juice, 1 teaspoon
  8. Pepper, 1/4 teaspoon
Instructions
  1. Grate the cucumber and let the water drain in a sieve.
  2. Finely grate the garlic, and place in a large bowl. Add the salt, pepper lemon juice, vinegar, olive oil and grated cucumber and mix together.
  3. Add the yoghurt, and combine well. Refrigerate until serving.
