If you, like me, thought those fancy and decadent glazed carrots you saw in food photos or at restaurants were way too tricky for you to serve tonight: think again. It’s extremely easy and just as delicious as you thought they would be!
I love easy recipes. I mean, if you serve those to guests they assume you’ve spent the whole day in the kitchen, right? Well are they in for a surprise. They need only an hour in the oven, in which you can just relax or do the dishes. No rotating necessary!
At my parents place
The boyfriend and I spent the weekend at my parents place. It was really good to be there: because of his placement we’ve spent some weekends in our apartment now, which is great, but then I can’t cuddle with the cats and dogs! Just kidding. I miss my parents most of course 😉
No but in all seriousness: sometimes a girl just needs to be around her parents for comfort. And my parents happen to live on a farm with two dogs (one pup!) and cats who always want to cuddle. And chicken, but I’m not going to pick them up… Haha!
Ever since I expressed my wish to become a waitress or at least be involved in hospitality my family have used this to their advantage. At parties I would be asked to help serve drinks or food “because you want to be a waitress, right!” *cue laughter* I never really minded this though, except for when my little brother would try to get out of clearing the table by claiming it was best if I started practising this early as it might come in handy when waitressing.

Serving people is obviously way better than clearing tables. Aaaanyway, this weekend my dad figured that since I now own a food blog, I should cook them something nice. My dad always likes to experiment with vegetables and sauces so our styles are obviously very different, which is why I figured it would be okay to have those different dishes on the table.
When I was scrolling through instagram I saw these gorgeous roasted vegetables and bam! I knew what I was going to cook.
Or at least, attempt to cook. This was my first try at honey glazed carrots.
Honey glazed carrots
I never really liked carrots and that is now definitely over. This dish was so tasty and so different from what we normally eat, it has to be a new favourite! Even my younger brother ate his share.
In line of the budget-proof challenge this recipe is veeery affordable: 1,50 as side dish for 5 people!
- Carrots, a bunch (11 in my case)
- Preheat the oven to 180 degrees.
- Clean the carrots: if the skin is nice just leave them that way or else you quickly peel them.
- Chop the green part off.
- Place them in an oven tray and top with honey. This is to taste: I used around 1.5 teaspoon per carrot.
- Sprinkle some thyme on top (you can use quite a lot!) and place this in the oven for an hour.
