A non-traditional stir-fry with kale, cannellini beans, cashews and sausage seasoned with thyme. Delicious, healthy and filling!
Here in the Netherlands we usually eat kale in one way: mashed with potatoes, and the typical Dutch “smoked sausage”. I wanted to try something else, and when I saw a recipe for a kale stir-fry I knew that was it!
I know that this recipe is going to upload on Wednesday, but I’m still going to dedicate this story-time to Tuesday 😉 Contrary to most people, Tuesday is actually my favourite weekday!
Now you may be wondering why. As I’m no longer a student (at least temporarily, until I figure out my anxiety…) I have a lot of time. Before I was afraid I’d get bored, or feel useless, but luckily the contrary is true.
You see, I’m doing what I enjoy now. You may think I’m lazy, and at times I am afraid I am, but I mainly feel so much better than before. Little stress, and a lot less panic attacks which results in me being happier, in general. So! Why is Tuesday my favourite day?
First of all, there’s a farmers market set up in the town square. I love going to the farmers market, and not only because it’s usually a lot cheaper than the supermarket (hey, still a student at heart ;)) but the general atmosphere is just great. They have such a wide variety of vegetables and fruits, which I as foodie of course thoroughly enjoy, and I always get inspired there! Today I picked up a squash, and I’m thinking of making roasted squash soup tomorrow… If it worked out, I’ll upload the recipe.
Furthermore, the library is relatively close to the market, so I always go there after my fruit and vegetable shopping. I love coming here to write, work on my blogs and simply feel productive! It’s always filled with students, which makes me feel relatively normal, too. Also, they have sooooo many cookbooks and even cooking magazines: I can be here for hours!
You may think this all sounds very boring, but to me it truly is a good day. I walk for half an hour at least, am outside and in this time a year that means I can enjoy the last rays of sunshine. On my way home I pass my favourite coffee places, and some cute little shops. Kale and cannellini bean stir-fry

It’s time to share this delicious stir-fry with you! Of course, you can use any kind of beans you like. Also, I don’t think those Dutch “smoked sausages” are generally available in other countries, but any sausage will do. The smoked sausage is usually boiled before serving, but you can also fry the sausage of course!

- Kale, 500g
- Cannellini beans, 250g
- (smoked) Sausage, 275g
- Cashew nuts, 50g
- Thyme, 2 teaspoons
- Salt and pepper
- Heat up some oil in a wok. Add the kale, and cook for around 15 minutes.
- Meanwhile, prepare the sausage according to instructions (smoked sausage is boiled, other sausages are usually fried).
- Add the beans and cashews and continue to stir-fry for 5 more minutes.
- Add the thyme and some salt, and the sausage in slices.
