Yes, you must have noticed by now that I am a huge fan of breakfast. All day breakfast is totally my thing! And one of my favourite ways to start my day is granola, for sure. As you have probably seen already, I like to experiment with different flavours!

Life Goals

Do you remember when you were a child? When you would say you wanted to become a princess. A firefighter. A dolphin trainer or a vet. Or, a waitress in my case. We were so certain that becoming that princess, firefighter, dolphin trainer, vet or waitress was our destination in life: we simply couldn’t imagine any other outcome.

However, as we get older our image of ‘future life’ changes. We learn that becoming a dolphin trainer might not be achievable, or that we are way better with numbers than with life-threatening situations. Naturally, I went through the same phase. Others told me that being a waitress was not a life goal, and that I could do better. Why not start my own restaurant?

So, mini-me changed her life goal to owning her own restaurant. Can you imagine? Now, years later, I have learned that this is, in fact, not achievable for me. I’m not really good with stress… haha. And I don’t even want to! It took me years to realize that having “just a normal job” is perfectly fine. I don’t know how, but I got the idea that being less than a restaurant owner or manager wouldn’t be good enough. I wouldn’t be good enough. No pressure?!

Don’t get me wrong: I never look down on people. I don’t think that working as a waitress is less of a successful job than being a big boss in some corporation. After 21 years, I’ve learned to redefine success. This means that my “Life Goals” changed as well. What I want in life now, *cue cheesy background music* is to become happy.

I’ve allowed myself to start dreaming again. Yes, I can be a waitress when I grow up! I don’t have to have a stressful life: no one can expect me to do anything but myself. I’m dreaming of a life filled with writing, cooking and maybe even serving my food to friends and family.

Lemon poppyseed granola

Yay, recipe time! I’ve used spelt flakes as well as oat flakes, but it’s perfectly fine to use only oats. Also, feel free to add any other ingredients you like, such as nuts for example!

Ingredients
  1. Oat flakes, 100g
  2. Spelt flakes, 50g (or 150g oats)
  3. Coconut oil, 3 spoonfuls
  4. Lemon zest, half a lemon
  5. Lemon juice, 1-2 spoonfuls
  6. Poppyseeds, 1 spoonful
  7. Pumpkin seeds, 1 spoonful
  8. Honey, 4 spoonfuls
Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Mix all ingredients together, and spread this out onto a piece of baking parchment on top of an oven tray.
  3. Place this in the oven for 20-25 minutes.
  4. Stir halfway, rotating the mixture.
  5. Let cool down, and store in an airtight container for up to two weeks.
