I’m going to be totally honest with you: I used to never eat overnight oats. We tried it once and it turned into this slimy mixture with a really weird texture: no thanks! Furthermore I definitely preferred my oats hot over cold. However, when I talked about this with a friend she told me what I did wrong: I didn’t include any yoghurt.

Apparently, yoghurt is the magic trick to making the perfect overnight oats. How could I not know that?

Naturally I tried overnight oats again, and this time I did add some yoghurt. As base I used almond milk, which in my opinion gives a great bit of flavour to the oats already. Definitely recommend this! However, feel free to use any type of milk/yoghurt you like. I included some coconut flakes and mango cubes for a summer style breakfast, and it turned out to be absolutely delicious! Okay okay overnight oats, you win this time 😉

Haha, when I was taking photos for this recipe my cat was enjoying herself to the fullest… I used a white table cloth, and she declared my photo-taking table as her personal tent! I’ll include a picture below the recipe 😉

Anyway, I hope you guys enjoy this recipe. I only listed 1 tbsp of honey because I used flavoured yoghurt: if you decide to use plain yoghurt I’d recommend adding some more sweetener. See you soon!

Delicious vegan & glutenfree overnight oats with mango and coconut flakes.

Mango overnight oats with coconut


Prep Time 5 minutes
Servings 1

Ingredients

  • 220 ml almond milk
  • 100 g oats
  • 1 tbsp honey
  • 1/2 mango
  • 100 ml vanilla yoghurt
  • 1-2 tbsp coconut flakes

Instructions

  1. Mix the almond milk together with the oats. Place this at the bottom of a jar or bowl, and top with the honey.

  2. Add the yoghurt. You can stir this if you want, but you can also leave it like this until morning.

  3. Cut the mango into cubes. Add to the mixture, and close with the lid. The next morning all you have to do is top with the coconut flakes, and enjoy!
