Birthday

When we’re having a birthday, the Dutch cheesecakes or ‘kwarktaart’ as we call it (quark pie) has become a bit of a staple. With a cookie crust and quark topping it’s literally done in minutes, and everyone loves a slice! There are endless varieties – even though strawberry and/or a vanilla version topped with fruits are the most popular ones. Lately, the chocolate version has made an uprising: use oreos as a crust, and melt some chocolate through the quark or Greek yoghurt… mmm!

Like I said, the Dutch cheesecakes were originally topped with (canned) fruit but there’s plenty of room for variety here. You can top them with cookie crumbles, chocolate, fresh berries… you name it! Feel free to use a bit of creativity, and make this recipe your own.

Mini Dutch cheesecakes

Ingredients

  • 1 sheet gelatine 1.7 g
  • 80 g Digestive cookies
  • 40 g butter room temperature
  • 20 g chocolate optional
  • 120 g quark or Greek / other thick yoghurt
  • 100 g sugar
  • 50 ml cream
  • 1 tsp vanilla extract
  • 0.5 tsp salt

Instructions

  1. Crush the cookies and blend into a paste like mixture with the butter, chocolate and salt. Cover the bottom of the moulds or glasses with the mixture, and press firmly.

  2. Place the gelatin in a bit of water for at least 5 minutes. Meanwhile, slowly heat up the milk with sugar. Stir well.

  3. Once the milk is warm and the sugar has dissolved, add the sheet of gelatin and stir. Let cool down slightly.

  4. In a separate bowl, mix together the cream, quark and vanilla extract. Once the milk mixture has cooled down, stir through the quark mixture.

  5. Pour into the shapes on top of the cookie crust, and let set in the fridge for at least an hour. Crumble over some extra cookies or decorate with fruit, and enjoy!
