You know how you feel when you finish your show on Netflix? Like ‘what the hell am I going to do with my life now’. That feeling. Well, lately I’ve been having that a lot. Netflix is one of my places to go when I’m tired or dealing with anxiety, as it’s filled with good shows and movies… I just don’t know which one to watch anymore!

You see, I’m not that into bloody scenes. Love a good story, so if there’s a good story with some blood that’s OK > like NCIS, Elementary, Blindspot or Prison Break. However, I also love those typical…. shows, like Pretty little liars or The Good Wife. Orrrr a show that you can just watch without really paying attention: Gilmore Girls is perfect for that.

However, so many of my shows are on hiatus and I’ve finished all the other ones: I need tips! Help! Lately I’ve actually been watching old Masterchef seasons, episode after episode, which is actually kinda fun too 😉

There was this one episode where they had to make Korean ‘Bibimbap’ (the contestants had a lot of difficulty pronouncing that, too ;)) and it was basically fried rice with a lot of ingredients in a bowl. That sounds super good, so I got inspired! However, as you can see, I ended up far far away from the Korean Bibimbap. No fried rice in sight 😉

Yes: I love me a good noodle bowl! It’s super customizable, you literally can’t run out of combinations to make. Add a different flavour or vegetable and BOOM! You’ve got a new dish!

Today I’m going to show you how to use the homemade boemboe I uploaded last Friday in a meal. If you don’t want to make a batch to store in your fridge or freezer, don’t worry! You can still cook this recipe. Simply replace with some onion or a store-bought curry mix.

Noodle bowl with vegetables and beef


Prep Time 10 minutes

Servings 2 people

Ingredients

  • 75 g soba noodles
  • 250 g beef
  • 250 g spinach
  • 125 g mushrooms chestnut
  • 1 red bell pepper
  • 2 eggs

Optional

  • 3 tsp homemade boemboe*
  • 1 tsp lemongrass finely chopped

Instructions

  1. Cook the noodles according to instructions. Drain, and toss back into the pan. Add the homemade boemboe and lemongrass, and stir through. Cover the lid to make sure it stays warm. [this step can be skipped: simply add a little salt to the noodles instead]

  2. Meanwhile, heat up a grill. Season the steaks with some salt and pepper, and cook to your preference. Place on a chopping board, and let rest.

  3. Sauté the spinach and mushrooms. You can add the chopped bell pepper as well, or leave it raw. After about 5 minutes of sautéing, take off the heat and season with some salt.

  4. Fry the eggs. Cut the rested steak in pieces, and assemble the bowl: noodles, mushrooms, spinach, bell pepper, egg and beef. Enjoy!

*: I uploaded a recipe of homemade boemboe last Friday. I'll add a link in the blog!

You can use the egg yolk as sauce, or add some sweet chilli, ketjap or soy sauce if preferred.
