It’s time for another great breakfast recipe! This time I experimented with a breakfast pie: a delicious oat crust topped with some yoghurt and fresh pear or any fruit of choice. It’s really really good: I love the combination of the crunchy crust with the smooth yoghurt and sweet fruit! The perfect variation to my regular oatmeal 😉

Breakfast pie

Errr yes, so I’m definitely not a morning person. However, as far as breakfast goes you can count me in! It’s so much easier to get out of bed when you know you’re going to have something tasty: pancakes, waffles, fresh breads, eggs…. Or a breakfast pie.

It’s perfect for anyone who:

  • is a morning person
  • is not a morning person
  • loves pie in general (me, me!)
  • regularly eats oatmeal,
  • yoghurt and granola or
  • fresh fruits for breakfast
  • loves the combination of different textures

Ehhhh maybe I should just stop this list and say that breakfast pie is a thing for everyone…. At least I think so!

The perfect way to start your day! Feel free to use any fruit of your choice.

For the crust:
  1. Oatmeal, 40g
  2. (Coconut) oil, 1 tablespoon
  3. Water, 1 tablespoon
  4. Honey, 2-3 tablespoons
For the topping:
  1. Yoghurt, 3 spoonfuls
  2. Fruit
  3. Cinnamon (optional)
Instructions
  1. Preheat the oven to 180 degrees Celsius.
  2. Mix the crust ingredients and place them in a small quiche form or in a muffin tin.
  3. Place this into the oven and bake for 15 minutes.
  4. Let this cool down slightly, so that it can get extra crunchy.
  5. Meanwhile, cut the pear or fruit of choice into pieces.
  6. Top the crust with some yoghurt, cinnamon and fruit, and enjoy!

  1. I definitely don’t mind the mornings, but knowing that I have a delicious breakfast ahead certainly makes things a little easier 😉 Love your breakfast pie idea with the contrasting textures.     1. Yes, me too! Coffee is a must. Thank you Dawn, I was so happy with how this turned out! And yes, I’m totally in love with her.. But taking food photos is hard when she’s around! I already have so many pictures with her in it too, haha!

    1. I know right, what’s better than starting the day with pie?! Our family has some sort of tradition of having leftover birthday cakes the day after, haha. And I love hearing that, thank you!
