Yes yes yes, I’ve said this a million times: I love breakfast. I bake some fresh granola almost every week, as it’s my boyfriends favourite breakfast with some yoghurt! His second favourite breakfast is bread with peanut butter, which inspired me to play around with the flavours and create this yummy granola variety.
This is only my second granola recipe on the site, but I’ve created so many different versions already! Can’t wait to share some more of those. Any flavour combinations you’d recommend?

Peanut butter quinoa granola
I don’t know if you’ve noticed this before, but I’m a huge fan of peanut butter. Haha! Who isn’t, right? I’m the type of person to eat it straight from the jar. Only when I have a bad day of course 😉
Unfortunately, I have some of those bad days. I mentioned in a previous post that I’ve quit school, at least temporarily, so that I can focus on feeling better and becoming a stronger version of myself. This takes hard work! And that makes me very tired, which results in me behaving like a little kid sometimes haha. I want to take naps, cuddle, read a book, watch a movie and eat loads of food. Actually that’s me most of the time, come to think of it 😉
Luckily I am surrounded by so many happy things: I live together with my boyfriend and we’ve adopted a little kitten last month. Heart eyes! She’s the cutest, and when I don’t want to go outside she’s there to keep me company.
I also have some very good friends, whom I might not see every week but I still feel that they will always be there for me when I need them. We’ve started talking on the phone, which is great since we’re all living in different cities now!

- Honey, 1 spoonful
- Peanut butter, 20g
- Coconut oil, 1 spoonful
- Oats, 75g
- Quinoa, 75g
- Maple syrup, 1 tablespoon
- Mixed nuts, a handful
- Preheat the oven to 200 degrees.
- Mix the peanut butter, honey and coconut oil and heat in the microwave for 20 seconds to make it fluid.
- Add the oats and quinoa to this and mix until everything is covered in the peanut butter mixture.
- Sprinkle some maple syrup over the top. Don't stir if you want some sweeter bites!
- Place this in the oven for 9 minutes.
- Rotate the mixture and add the mixed nuts. Place back into the oven for 9 more minutes.
- Store in an airtight container once cooled, for up to 2 weeks.
