Pita breads with chicken, radish and hummus: a super easy yet delicious week night meal! Perfect recipe for when you have guests over, too.
Fluffy pita breads, crunchy radish, salty chicken, crispy lettuce and creamy hummus: do I need to say more?!
Heyyyy guys! What’s up with you? How has your weekend been? I hope it has been super relaxing, fun and filled with good food 😉
I have been so extremely tired lately, and it’s no fun at all. I loooong for Spring, because I have a feeling part of my sleepiness is from this sad weather, too! With no school or work (due to anxiety) I’ve been keeping myself busy with other things, such as my blog and my cooking. I wish I could do as much as I wanted to do, and I can’t wait for the day that I have enough energy again to do so again!
That’s why I’m shifting my focus to doing things that make me happy again. For example: going to the library to work on my blogs, cooking, eating delicious foods but also exercising a lot so I wont feel guilty, reading good books, watching my favourite series (New Girl, hello!) and cuddling with our cute furry baby Noes (It’s a cat, haha). And cooking simple yet delicious meals is part of that plan, too!
Pita breads are SO easy to use in a meal, don’t you agree? While we used to only fill them with lettuce, shawarma and garlic sauce, I now have tons of inspiration on how to use them. For example, the leftover ones I fill with cheese, salami, leftover veggies > pop this in the toaster, and you have a delicious and quick lunch!

However, one thing I always use in a recipe with pita or similar bread, is something creamy. And in my opinion, hummus is the way to go! If you don’t like hummus, feel free to substitute for some mashed avocado.
Final note: you can use any type of (flat) bread for this recipe. It’s all about the fillings!
- Pita breads, 4 large
- Smoked chicken*, 200g
- Radish, +/- 150g
- Mixed lettuce, 150g
- Hummus, 150g
- Preheat the oven to 200 degrees Celsius, and bake the pita breads according to instructions. This should take around 10 minutes.
- Meanwhile, cut the chicken, radish and lettuce into pieces. Place in separate bowls.
- When the breads are done, you're ready to serve!
- *: instead of smoked chicken you can also use grilled, fried or cooked.
