There’s nothing easier than roasting vegetables as a side dish. Plus, it’s super delicious! These roasted beets are also very healthy, because no oil is required to cook them. What’s not to love?
Part two of the three recipes I share with you today! I roasted 4 different vegetables, and made a super easy how-to video.
I was never the beet-loving kinda girl. I wasn’t really into vegetables at all, anyways, but beets were just a bit worse than the others. Sure, it was kinda cool that you could colour the plate with the red from the beets, but other than that… It was a boring vegetable. Like many other vegetables.
However! Now that I’m cooking myself I’m on a mission to try and “upgrade” those much hated veggies from my past. I now am no longer afraid to serve brussels sprouts, beets and what not 😉

- Cooked beets, 4 large
- Goats cheese, 50g
- Preheat the oven to 180 degrees Celsius.
- Cut the beets into four quarters. You can leave them attached at the bottom, or cut them loose. Place into the oven for 40 minutes.
- Take them out of the oven and sprinkle the goats cheese on top. Let it melt slightly, and enjoy!
