Ooooooh finally: it’s Spring! I have been longing for this moment for so long, and we’ve had quite a few teasers… I’ve already spent quite a few hours in the sun on our balcony, and I am loving the light that floods our apartment.

For a food blogger, this light is particularly important: finally I don’t have to cook in the middle of the day anymore to shoot my ‘dinner’ photos! Natural lighting really has the best effect on photos, and I’m quite happy with how this series turned out.

You all have seen that I’m a fan of roasted butternut squash and roasted vegetables in general. Roasting vegetables is such a great way of getting maximum flavour with minimal result: let your oven do all the work!

The roasted butternut squash gets so nice and creamy, and combined with sweet red onion and salty feta… You’ve got a happy, happy me! Tip: pair this with some couscous and perhaps a nice piece of meat for a really flavourful dinner.

Roasted butternut squash and red onion with feta


Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes
Servings 2 people

Ingredients

  • 1 half butternut squash
  • 1 red onion large
  • 50 g feta
  • 1 tsp rosemary dried or fresh
  • olive oil
  • rock salt

Instructions

  1. Preheat the oven to 200 degrees Celsius.

  2. Cut the butternut squash lengthwise in half, and scoop out the seeds.

    Cut in slices of 0.5-1 cm thick.

  3. Peel and cut the onion into quarters.

  4. Place onion and squash on an oven tray lined with baking parchment, and drizzle some olive oil over the top. Add salt and rosemary, and mix.
  5. Place in the oven for 35 minutes, rotating halfway.
  6. Garnish with crumbled feta, and enjoy!
