We all have those days where we just don’t want to spend hours in the kitchen. Even I have those, and I love cooking! You just want to throw some things in a pan and eat within little time, and that is totally understandable. For these days, I would like to turn your attention to dinner bowls. Dinner bowls are my favourite way of throwing together a meal, and you can even eat it on the couch if you like!

All you do is choose a base (rice, noodles, grains, potatoes), add something filling (meat, poultry, tempeh, tofu, beans) and then all the vegetables you like. Cooked, steamed, fried or raw. It all doesn’t matter! Oh, and if you want to make it even better you add some tahin, hummus or avocado to add that creaminess: yumm!

Anyway, noodle bowls are quite regular in this household. Noodles only need 3-5 minutes, which I think is ideal. Add some vegetables and something as delicious as sesame chicken and voila: no one would guess that this dish only cost you minutes to prepare!

Sesame chicken noodle bowl

Ingredients

For the sesame chicken

  • 250 g chicken breast in thin strips
  • 1 tsp honey
  • 1/2 tbsp sesame oil
  • 1/2 tsp paprika powder
  • 1/2 tsp garlic powder
  • 2 tbsp sesame seeds

For the noodle bowl

  • 150 g soba noodles
  • 1 large bok choi
  • 2 eggs
  • 2 spring onions
  • sweet chilli sauce for serving

Instructions

  1. Season the chicken strips with the honey, sesame oil, paprika powder, garlic and sesame seeds. Heat up two frying pans with some oil.


  2. Boil two eggs until medium, which will take around 6 minutes.

  3. Meanwhile, cook the soba noodles in boiling water for around 3-4 minutes or according to instructions. Wash and chop the bok choi in pieces. Cut the spring onions in fine rings, and set aside.

  4. Once the frying pans are nice and hot, add the sesame chicken in one and the bok choi in the other. Cook for around 4 minutes, stirring occasionally.

  5. Peel the boiled eggs and start assembling your dinner bowls. Add the noodles first and top with the chicken, bok choi, egg and spring onions. Serve with some sweet chilli sauce, and enjoy!
