Mmmm, delicious avocado, beans and chicken inside a crunchy lettuce leaf… Tasty! And, according to my precise timing, done within 15 minutes. Whaaat!
These lettuce boats sort of happened. My original plan was to make some sort of wraps out of it like I had seen on Pinterest, so I wrote “cabbage lettuce” on the shopping list. My sweet innocent boyfriend then decided it was cool to buy these mini cabbage lettuces because they have better flavour… It’s my own fault, I always want to keep my meal planning a secret so I can sort of surprise him every day, haha! But anyway, I had to improvise. And what’s cuter than these lettuce boats?
Just because I’m not usually a fan of tacos doesn’t mean I can’t create lettuce boats with taco flavours, right? Yes, I know that I will receive a comment saying “WHY DON’T YOU LIKE TACOS” like that time I wrote that I’m not that into Mexican food in general (see this post for reference ;)) and I have to admit I don’t know why I would wrinkle my nose at Mexican food.
The only thing I can come up with is that when I was younger we always ate dishes like this from a flavour package and that just doesn’t cut it for me anymore! (Sorry mom) I don’t know, I think even younger me was bored easily by the same combination of food every time. Honestly, I don’t think I’ve cooked the same dish twice this whole year…. And not only because I would run out of blog ideas soon: I simply love discovering new flavours and dishes! Hands up if you’re with me 😉
Howeveerrrr, this dish is completely different. It has that perfect flavour and texture combination of crunchy lettuce, creamy avocado, soft chicken and delicious beans… Is it okay to say that you are really proud of the dish you created? Because I am! No flavour packages for me baby!
Do you guys know the avocado song? If you don’t: lucky you. If you do: F our lives! Every time I read or hear the word avocado I get this song stuck in my head…The boyfriend hates it when I sing it, because it’s sooo annoying.
My favourite part is definitely when she starts to sing “Guac. Amole. Guac guac amole.” But seriously, I wish I had never heard this song.

As I’m writing this I realize adding corn would have been nice too. So you might want to try that. If you are a fan of sauces you can add some garlic mayo e.g., but for me it was fine without.
- Chicken fillet, 3 pieces
- Lettuce, 1 cabbage
- Beans, 300g (I used brown)
- Avocado, 1 piece
- Salt and pepper
- Cut off the bottom of the cabbage and peel off the leaves. Wash and dry.
- Season the chicken and cut into smaller pieces.
- Bake the chicken until done.
- Cut the avocado in pieces.
- Serve! Place some beans, avocado and chicken in a lettuce leaf. Delicious...
