Spinach-beef meatballs in creamy tomato sauce | Stay Alive and Cooking

Pasta is always a good source of inspiration. Today I decided to reinvent the classic “spaghetti and meatballs” and make it my way! The meatballs are made of spinach and minced meat and surprisingly tasty: If you close your eyes you almost can’t tell it’s not 100% beef! Weird, right? The spinach adds a nice flavour, too.

I was inspired by the latest trend: veggie burgers. I decided hey, why not make veggie meatballs out of it? Of course, these are not 100% vegetable as I still added some beef to it but it was the perfect combination!

The recipes are separate so if you’d only like to make the spinach-beef meatballs you can.

For the meatballs:
  1. Minced meat, 200g
  2. Spinach, 280g
  3. Bread crumbs, 3 spoonfuls
  4. Egg, 1 piece
  5. Onion, 1 small
  6. Garlic, 1 clove
  7. Salt and pepper
  8. Chilli powder (optional)
For the spaghetti and sauce:
  1. Spaghetti, 200g
  2. Tomato, 4 pieces
  3. Onion, 1 piece
  4. Garlic, 1 clove
  5. Creme fraiche, 100g (or sour cream)
  6. Italian herbs
  7. Salt and pepper
For the meatballs:
  1. Preheat the oven to 190 degrees.
  2. Chop up the spinach in small pieces and toss this in a pan. Cook for around 4 minutes until most of the water is evaporated and the spinach has shrunken.
  3. Place the spinach on a kitchen towel and drain as much water as possible.
  4. Put the minced meat in a bowl and finely chop up the onion and garlic. Add this to the meat.
  5. Add the bread crumbs, egg, salt and pepper and chilli (optional) together with the spinach and mix well with the meat.
  6. Make small balls out of the spinach/meat mixture and place these on a sheet of baking parchment.
  7. Place them in the oven for 20 minutes.
For the spaghetti and sauce:
  1. Cook the spaghetti according to the package.
  2. Chop up the onion and garlic and toss in a pan with some oil. Cook this for a few minutes, while chopping up the tomatoes.
  3. Add the chopped up tomatoes and 100 ml water and place the lid on the pan. Cook this for 5 minutes.
  4. Now you can add the creme fraiche and the meatballs. Mix well.
  5. Season the sauce with salt, pepper and Italian herbs.
  6. Serve with the spaghetti, and enjoy!
