It’s 2017, a new year, but the sweet potato trend is still there. I personally love everything about it, the taste is amazing, the variety of the structure is so big and it is always colourful. That is why I wanted to try to bake with sweet potato, instead of mashing, grilling or cooking. However, this girl prefers salty things, so with some creation this Filling Yummy Sweet Potato Bread was born.

The Dutch ‘Boterham’
Hi everyone, there I am again, Louise, with a new Lunch recipe. Last week when I was eating my ‘boterham’, which is the dutch word for sandwich, I was kind of done with it. We as Dutch people eat the most bread during lunch in the whole the world, I think. And why? Everyone I asked said: “It’s easy” or “Well.. I always did it..” or other people don’t even think about it anymore. Isn’t this bad? Food is nutrition first place, but also a moment of rest and a moment to enjoy yourself! That is why I wanted to make an alternative which is not basic.
Sweet potato, again?
My previous recipe, the sweet potato toast, was also an alternative, but the problem I faced was that is not convenient to take with you for work or school.
People really take too little effort in eating healthy during breakfast and lunch. This Sweet Potato Bread is stuffed with veggies, as the sweet potato is stated as an vegetable. (Even as number 1, which you can read about here!)
Advantages, advantages, and advantages..
Besides the healthy aspect of the potato itself, this recipe also includes whole wheat flour. This prevents constipation, lowers blood cholesterol and might help you lose weight. Also, whole-wheat flour contains several vitamins, including folate, riboflavin and vitamins B-1, B-3 and B-5. And the most great thing is, you don’t taste the difference between white flour in this recipe, due to the sweet taste of the potato.
Besides that, sandwiches are often very dry, so you need butter or other toppings for making it more moist and yummy. As this bread is more like a cake, the structure is really creamy already.
Tam tam tam, another advantage… it is so filing! Seriously, I had two slices for dinner, and I was really stuffed. You can go nuts with the toppings. I ate the slices with some garlic butter, but you could try cream cheese, ham, cheese or whatever you like to top it with. Or, no toppings and just as it is 🙂
Lastly, the best part is that you can bake lots of it at one time. Cut the bread in slices and freeze it. You could maybe even bake it 5 minutes less so you can bake it on the morning itself for a real fresh taste.

Sweet potato bread

Sweet Potato Bread
- 250 g sweet potato
- 100 g flour wholewheat
- 50 g Greek yoghurt
- 1 tbsp baking powder
- 1 egg large
- 100 g white cheese
- 1 red onion large
- 2 tbsp (pumpkin) seeds
Preheat the oven to 180 degrees Celsius.
Cook the sweet potato for around 10 minutes, or until soft.
Mash together with the egg, yoghurt, and stir through half of the white cheese.
Mix through the flour and baking powder until fully incorporated.
Finely chop the red onion, and mix 3/4 through the mixture.
Pour the mixture into a greased baking mould. Top with the rest of the red onion, crumbled white cheese and seeds.
Place in the oven for around 40 minutes, and enjoy!
Cottage cheese would work instead of Greek yoghurt.
