Have you already tried this super easy delicious new trend? The Sweet potato toast is a great alternative for normal sandwiches, very healthy and even gluten free! The amazing thing about it is the variety, you can literally go crazy with the toppings. Additionally, the orange colour makes it so attractive-looking, which is something I really love about this recipe. And, last but not least, it can also be served as breakfast or even a nice dinner to share, doesn’t this just sound amazing?

Hi there, my name is Louise 🙋🏼
This year I started posting some of my recipes and food pictures on my instagram account. However, as followers and likes grew, it became more than just an account, it became a passion! That is actually how I met stayaliveandcookingdotcom, which I am so grateful for!
I was sick for a long period of time and because of that my body needed a lot of vegetables and whole-wheat products, based on a strict diet.
That is the reason for this account: show people how you can create delicious and creative dishes with just ‘stupid boring healthy foods’! I wanted to make my food good looking as well.
I met a lot of new people, learned a lot of new things and I am getting more excited everyday. So, my goal for this year is to focus more on my account, and maybe even start-up my own blog with my recipes and food experiences. To keep blogging a try-out, dear Vivian, from stayaliveandcookingdotcom was so grateful to let me write this post on her blog!
I will share with you my premiere recipe on a blog, online. Isn’t that great?

Sweet potato toast
So, my first recipe is this recipe with the amazing main ingredient: sweet potato. It is funny because I kind of changed Vivian’s mind with this recipe, as she wasn’t into sweet potato at first (can you even imagine?).
While brainstorming about ideas for recipes, we came up with the nice name ‘Louises Lunches’ to put as category on this blog. So I started thinking about lunch recipes. I saw a sweet potato toast once in a nice restaurant in Dusseldorf, called ‘Lauras Deli’, which I want to talk about another time. Additionally, more inspiration was found on pinterest, which is stuffed with stunning pictures of sweet potato toasts and other recipes (attention; don’t look when hungry :D).
One thing I really recognized in 2016 was a year full of new healthy trends and ingredients, with a lot of avocado and sweet potato. I really love this kind of lifestyle trend, as a lot of people get more aware of their food. However, as long as it stays within limits.
Because we all like to have cheat days now and then, right? Or everyday.. 😉 I am very curious what new trends will arrive in this new year 2017, any ideas?
Well, back to this recipe. The taste was very bright, it smelled delicious and it was really filling. Actually all things you want for a great recipe. Oh, and of course, it was very easy. I literally put it together while Vivian was taking perfect pictures of another recipe we created (which always takes some time, haha!).

- Sweet potato, 1 medium orange
- Boiled eggs, 2
- Avocado, 1/2
- Lemon juice, 1 teaspoon
- Cream cheese with herbs, 2 spoonful
- Smoked salmon, 100g
- Parsley, to garnish
- Cut the sweet potato in thin slices lengthwise.
- Preheat a frying pan without oil.
- Cook them on both sides till softened (10 min).
- Mash avocado with salt and pepper and some lemon juice.
- Slice the eggs.
- Top the toast with the mashed avocado and eggs slices.
- Top the toast with cream cheese.
- Add the smoked salmon slices and the parsley.
- Garnish if preferred, with bell pepper or chia seeds.
- The cooking time depends on the thickness of the potato.
- You can eat them with or without skin.
