A spicy and aromatic chicken ginger zoodle soup with carrot, chicken, mushrooms and ‘zoodles’ (zucchini noodles). Healthy and delicious!
You’ve got the aromatics: fresh ginger, garlic and chilli… Your house will smell amazing! These ingredients together with the chicken and vegetables create a soup with such a kick: perfect for when you’re feeling under the weather! The zucchini and somewhat sweet carrot noodles create the perfect balance.
Ahh, the winter blues. When I wake up in the morning and I see a cloudy, grey world out there as I walk around with frozen feet… Definitely winter blues. Anyone else? Of course, there are many ways to beat this: I for example try to get as much sunshine on my face as possible. Try it! Go outside, walk around. Snif in the fresh air. I used to hate my parents when they told me this, but I think they’ve got a point…
I’m currently in the library, which really is my blogging-place to be. My home away from home. I kid. But I really do like it here: I bring my laptop and my blog planner (find my list of favourite printables here!) and a survival package of food, snacks and hot tea or coffee. Perfect.
Plus: I don’t get distracted here. Okay okay. I do, as I love people watching and there’s a lot of different people walking by when I’m writing here 😉 But I can’t get up and check the fridge for food, and the cat can’t walk over my keyboard messing up my whole story… Nah, she’s allowed to do that. But when I see her lounging on the couch I just want to join her!
Zoodle soup with chicken and carrot
Oh yes, so back to my reason for this recipe. I made a spicy soup with a kick: loads of ginger, garlic and chilli! But I think it’s good, in my not-so expert opinion. At least I felt the kick, which is something I often need in winter! It gives you a real boost, especially the ginger. So, if you’re feeling sick… Go and make this soup!
Also, if you’re not feeling sick: go and make this zoodle soup. The zucchini neutralizes the strong flavour and the carrot adds such a nice slightly sweet & crunchy touch. Definitely recommend! Chicken (soup) is always a good idea, and I personally am a big fan of mushrooms and spring onion too. Win win win win win!

- Chicken stock, 1 litre
- Fresh ginger, 30g
- Chilli flakes, 1 teaspoon
- Garlic, 1 clove
- Chicken, 450g
- Chestnut mushrooms, 100g
- Spring onion, 2
- Carrot, 2 medium
- Zucchini, 1 small
- Start by cooking the broth. Heat up the chicken stock and add the peeled ginger in chunks (if you're taking it out before serving) or grated.
- Cut the chicken into pieces and add to the broth. Cut the mushrooms into quarters and add as well.
- Bring this to a boil and let simmer. Add the spring onion in rings and the chilli flakes. After 10 minutes, taste and add additional salt/flavourings.
- Make noodles from the zucchini and carrots by using a spiralizer or food processor.
- Serve with the soup, and enjoy!
